A Cozy Night In: Spinach & Chicken Sausage Alfredo with a Flavorful Twist

There’s something undeniably comforting about a creamy bowl of pasta, especially when it’s homemade with love and just the right touch of rustic flavor. This week in my kitchen, I brought together a few of my favorite ingredients—chicken sausage, fresh spinach, and the magic of Salt Sisters’ Salsa di Parma—to create a rich and cozy Alfredo dish that’s perfect for a quiet dinner or a casual gathering with friends.


What I love most about this recipe is how it balances the familiar with something just a bit unexpected. The Salsa di Parma adds a layer of garlicky, herby goodness that brings the whole dish to life, without needing to fuss with a ton of extra seasoning. It’s bold, but still elegant—like a well-loved vintage find that just fits.


Whether you’re winding down after a busy day or treating yourself to a slow evening at home, this is one of those dishes that makes everything feel a little more special.




Spinach & Chicken Sausage Alfredo with Salsa di Parma


Serves: 4

Total Time: 30 minutes


Ingredients:

• 8 oz fettuccine or your favorite pasta

• 1 tbsp olive oil

• 2–3 chicken sausages, sliced (I love Simply Nature Spinach Chicken Sausage from Aldi)

• 2 cups fresh spinach roughly chopped

• 2 tbsp butter

• 1 teaspoon of crushed or grated garlic

• 1 cup pasta water

• 1 ½ cups heavy cream

• ½ cup grated Parmesan cheese, plus more for serving

• 1 tbsp Salt Sisters Salsa di Parma mix

• Salt, pepper, and red pepper flakes to taste


Instructions:

1. Cook pasta according to package directions. Don’t forget to save a bit of the pasta water before draining—it’s a secret weapon for a velvety sauce.

2. In a large skillet, warm the olive oil and cook your chicken sausage slices until golden and slightly crisp. Set them aside.

3. In the same skillet, melt the butter.

4. Slowly pour in the heavy cream and garlic, whisking gently, and then stir in the Salsa di Parma. Let it simmer for a few minutes until it starts to thicken.

5. Add in the Parmesan, salt, and pepper. If the sauce feels too thick, a splash of pasta water will smooth it right out.

6. Stir in your spinach until just wilted, then add the sausage back to the pan.

7. Toss in your cooked pasta and the pasta water and mix until everything is beautifully coated.

8. Top with extra Parmesan and a pinch of red pepper flakes, if you like a little heat.

 

Serve it up in your favorite vintage bowl, light a candle, and pour a glass of something nice. It’s the little details that turn an everyday meal into a moment worth savoring.
